Recipe from Feel Good Foodie
Ingredients:
1 cup garlic cloves, peeled
2 teaspoons salt
3 cups neutral oil (canola)
1/2 cup lemon juice.
Steps:
Slice cloves lengthwise and remove any green sprouts.
Add garlic and salt to food processor.
Blend until finely minced, scrape sides of processor.
While processor is blending, slowly pour in 1-2tablespoons of oil, then stop and scrape the sides.
Continue blending in 1-2 tablespoons at a time until creamy.
Once creamy, raise blending speed and alternate between adding lemon juice and remaining oil. (May take 15 minutes)
Cover in a glass container and cover with a paper-towel to breathe (makes about 4 cups).
Refrigerate overnight.
Replace paper-towel in the morning with an airtight lid, can remain in fridge up to 3 months.
