1-2 boxes lasagna noodles.
In a bowl, mix the following:
Large jar of spaghetti sauce
After emptying the jar into a bowl,
fill it (jar) half way with water and add this to sauce.
You can also add saute garlic and other seasoning to sauce.
In another bowl mix:
Large tub of cottage cheese
2 eggs
1-2 tablespoons parsley flakes
2 cans spinach, drained
Oil lightly bottom of pan, (can use butter, if you don’t have oil)
Lay out one layer of dry noodles. They will expand but it’s ok to overlap a little.
Ladle sauce to cover noodles, use about ⅓ of sauce, spoon on 1/2 cottage cheese mixture and smooth out a little.
Layer on spinach, using about half.
Top with a layer of shredded mozzarella cheese.
Next layers are noodles, sauce, cottage cheese, spinach, cheese.
Last layer of noodles sauce and cheese.
You can add some Italian cheese blend on top.
Bake at 350F for 90 to 120 minutes (or until the top is melted and lightly toasted).
