Ingredients:
3Lbs Gold or Red Potatoes
1 Cup Chopped Cooked Bacon (5-7 slices)
1 1/2 Cups Shredded Cheddar Cheese
1 Cup Sour Cream
1/2 Cup Mayonnaise
3 Green Onions - Sliced/Chopped
Handful Fresh Parsley - Chopped (Optional)
Salt/Pepper to Taste
Method:
Cut potatoes into uniform-ish chunks.
Boil in salted water until fork tender.
Drain potatoes, cool.
Mix with loaded ingredients.
Edible best when chilled, but totally good heated as well.
