Ingredients for Creamy Gnocchi Soup With Veggies:
Instead of listing a full recipe, I’m adding the ingredients for the most recent video.
Not using measurements since all recipes can be adjust to suit your cooking needs.
Veggies:
- celery stalks
- chopped carrots
- chopped onion
- diced potatoes, cut into quarters
- corn, can use fresh, canned, or frozen
- spinach, measure with your heart ..
(Add at the end of cooking vs beginning for fresher flavor and to retain color.)
Aside from spinach, sauté all veggies for about 3 minutes before adding the soup base.
Soup Base/Seasonings:
Chicken stock (or stock of choice)
Note: add stock after sautéing veggies, and let come up to a boil before adding next ingredient.
Heavy Cream — note: add 2 tblsp of corn starch to heavy cream before adding to soup. This will help thicken soup base.
Season after adding heavy cream with: Sage, thyme, basil, garlic, salt, pepper, and oregano.
Season to taste! Can also add in Parmesan Cheese.
Let soup simmer for 20 minutes after adding heavy cream, stirring occasionally.
Then add in the gnocchi.
The gnocchi will float to the top once it’s done cooking.
Stir in spinach after the gnocchi is done.
At this stage you can adjust for seasoning based off your taste preferences, otherwise: Ready to serve and enjoy!
