Ingredients
- 1lb boneless skinless chicken breasts cut into smaller pieces
- 1lb boneless skinless chicken thighs
Marinade
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 6 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon paprika
- 3/4 teaspoon cardamom
- 3/4 teaspoon cumin
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon cinnamon
Instructions
- Whisk to blend marinade ingredients.
- Add chicken to marinade and stir to coat evenly.
- Cover and marinate in fridge at least 1hr to 24hrs (overnight).
- Preheat oven to 400F
- Use a rimmed (parchment preferred) lined baking sheet.
- Roast chicken until cooked through (15 mins approx, turning halfway through).
- Cut into thin strips when done.
For seared edges transfer to a skillet with the juice and saute until they begin to brown. (Try not to overcrowd skillet.)
Serve with rice, pitas, pickles, tomatoes, lettuce, and garlic sauce or tahini sauce.
