Ingredients

  • 1lb boneless skinless chicken breasts cut into smaller pieces
  • 1lb boneless skinless chicken thighs

Marinade

  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 6 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 3/4 teaspoon cardamom
  • 3/4 teaspoon cumin
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon cinnamon

Instructions

  1. Whisk to blend marinade ingredients.
  2. Add chicken to marinade and stir to coat evenly.
  3. Cover and marinate in fridge at least 1hr to 24hrs (overnight).
  4. Preheat oven to 400F
  5. Use a rimmed (parchment preferred) lined baking sheet.
  6. Roast chicken until cooked through (15 mins approx, turning halfway through).
  7. Cut into thin strips when done.

For seared edges transfer to a skillet with the juice and saute until they begin to brown. (Try not to overcrowd skillet.)

Serve with rice, pitas, pickles, tomatoes, lettuce, and garlic sauce or tahini sauce.
