Ingredients
1 lb. packaged gnocchi
1 pint cherry tomatoes
2 cup fresh spinach, chopped
5 artichoke hearts, chopped
2 garlic cloves, minced
1/2 cup white wine
1/2 cup chicken broth
8 oz. hot Italian turkey sausage
3/4 cup grated parmesan cheese
Instructions
Preheat oven to 350F.
In a baking dish, add gnocchi, tomatoes, spinach, artichokes, and garlic; season with salt and pepper.
Add wine and broth then spread sausage in an even layer up top.
Cover and cook for 35 minutes, then stir in parmesan cheese—slightly bursting the tomatoes with the back of a spoon—before serving.
Notes
- If you don’t have broth, add water. Don’t be like me and add more wine!
- I feel like I should have chopped the artichokes finer. Next time, I’m pulsing them in the food processor with the garlic.
- I think you could switch out cheese if you want for something like ricotta or mozzarella but they would need to be added before putting the dish in the oven, not after like with the parm.
- This recipe seems really easy to customize, switch the spinach for arugula, add roasted red peppers or sun-dried tomatoes or olives even. Switch up your protein. I added some butter at the end for a little more sauciness. The possibilities are vast.
