Chirp’s Crepes

Gluten Free Crepes as Supplied by Chirp

Ingredients

  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup water
  • 1 cup gluten-free all-purpose flour with xanthan gum
  • 1/4 teaspoon xanthan gum (if not included in your flour already)
  • 2 tablespoons granulated sugar
  • 1 tablespoon pure vanilla extract
  • 3 tablespoons unsalted butter, melted

Instructions

  1. In a large bowl, whisk eggs with mixer
  2. Add all the rest of the ingredients and mix on medium for 1 minute until fully combined and batter is smooth
  3. Spray non-stick pan with gluten-free spray
  4. Pour 1/4 cup of batter into center of pan. Lift from heat and swirl pan to spread batter evenly in a circle
  5. Cook on medium for 30-45 seconds or until browned on bottom
  6. Flip crepe over and cook about 30 seconds or until browned. Repeat with remaining batter
  7. Slide crepe onto a plate. Serve rolled or folded into triangles with your favorite fillings or toppings. Enjoy!
